Self-hosting is usually chosen for one of two reasons: the network is closed and an outbound connection to a vendor cloud is not permitted, or the estate is large enough that per-screen subscription pricing has stopped making sense.

It is not only an open source option. Several commercial vendors sell an on-premise licence alongside their hosted product, and those deals are typically quoted rather than listed.

What you take on is the upgrade path. A hosted CMS is patched by the vendor. A self-hosted one is patched by you, and a player fleet running an old build is how a signage estate quietly falls out of support.
